I can't remember what I wanted to make when I brought a 6 pack of coconut milk from Costco. But, out of sheer luck, I managed to make a unbelievably refreshing, smooth, and sweet drink perfect as a side snack. Or, as I have recently been told, also perfect to sober up with after a few too many drinks.
This is unbelievably easy to make and simple to store so give it a try!

400 millilitres of coconut milk (any which say rich and creamy are best)
800 millilitres of water
50 grams of yellow rock lump sugar (normal granulated sugar will also work, but rock sugar is best)
Pour the 400 millilitres of coconut milk, 800 millilitres of water, and add the 50 grams of yellow rock lump sugar into a pot.
Heat the pot on maximum heat and stir occasionally until all of the sugar has melted and there is a smooth consistency throughout.
Pour the contents into a container, or cover the pot with clingfilm and leave to cool.
When cool, put the completed coconut milk into the fridge and leave to cool until pieces start to form.
Take out the coconut milk whenever you want some and pour yourself a cup!
